How to Make Real Mapo Tofu at Home (No Wok Needed)
Mapo tofu is not a curry. It is a specific balance of salt, fermented paste, chilli and Sichuan pepper โ and you can hit it in a normal pan.
้บปๅฉ่ฑ่ has a reputation for being hard to reproduce outside Sichuan. It is not. What it needs is four specific ingredients and one piece of technique โ and almost every failed version is missing one of them.
The four things you cannot skip
- Doubanjiang (่ฑ็ฃ้ ฑ): fermented broad bean and chilli paste from Pixian. This is the backbone. Nothing else gives you that deep, salty, faintly fruity heat.
- Douchi (่ฑ่ฑ): fermented black soybeans. Adds the funky, savoury bottom note. Rinse them first or they will over-salt the dish.
- Sichuan peppercorn (่ฑๆค): the numbing, citrusy, lip-tingling part. Added at two different moments โ once in the cooking, once at the end.
- Soft tofu: not firm. The silky contrast against the coarse sauce is the whole texture of the dish.
The technique: salt the tofu first
This is the step home cooks skip, and it is the reason their tofu falls apart. Sliding the cubes into barely-simmering salted water for two minutes firms the outside just enough to survive being simmered and shaken. You are not cooking the tofu, you are setting it.
Method
- Salt the tofu: bring a small pot of water to a bare simmer, add 1 tsp salt, slide in the cubes and hold for 2 minutes. Drain gently.
- Toast the Sichuan peppercorns in a dry pan over medium heat for 60โ90 seconds until fragrant, then grind coarsely.
- Heat the oil in a wide pan over medium-high. Fry the minced meat until the fat renders and the edges brown, about 3 minutes.
- Add doubanjiang and black beans. Fry 60โ90 seconds until the oil turns red. Add garlic, ginger and spring onion whites; fry 30 seconds more.
- Pour in the stock, soy sauce and sugar, bring to a simmer, then slide in the tofu. Simmer 4 minutes โ shake the pan rather than stirring.
- Stir the starch slurry and add it in three additions, letting each thicken, until the sauce coats and glistens.
- Finish off the heat with half the Sichuan pepper and chilli oil. Scatter the rest on top with the spring onion greens.
Substitutions if you cannot find the real thing
- No doubanjiang: blend 2 tbsp miso with 1 tsp chilli flakes and 1/2 tsp smoked paprika. Different, but it works.
- No Sichuan peppercorn: use 1/2 tsp black pepper plus a wide strip of lemon zest. You lose the numbness, not the dish.
- No douchi: use 1 tsp extra doubanjiang plus a small dash of soy sauce.
- Vegetarian: swap the pork for finely chopped shiitake mushrooms and use vegetable stock. It is genuinely excellent.
The finished dish should have a visible layer of red oil floating on the sauce. If it looks matte and brown, you did not fry the paste long enough before adding liquid.
How spicy should it be?
Authentic mapo is more numbing than hot. If your mouth is burning but your lips are not tingling, you have too much chilli and not enough Sichuan pepper. Add pepper at the end, taste, add more โ it is a dial, not a fixed quantity.

- 120 g (4 oz) minced pork or beef (or 100 g finely chopped mushrooms)
